Puff pastries with Praga ham and grilled cheese

Ingredients
- 200 g wheat
- 100 g butter
- 75 g water
- Salt
- 100 g Emmental
- 100 g Praga ham
- Milk to taste
- Mixed seeds
PREPARATION

Grind the wheat with Faribon 600 or Faribon 600 P;

Mix 30 grams of flour with the butter using the planetary mixer with the leaf hook;

When the butter has absorbed all the flour, take the mixture from the bowl, transfer it between two sheets of baking paper and give the dough the shape of a rectangle about half a centimeter high with the help of a rolling pin. Place in the refrigerator;

Mix the remaining flour with the water and a pinch of salt until the mixture is soft;

Roll out the dough on a lightly floured pastry board with the help of a rolling pin and form a rectangle. Place the butter mixture in the center, flattening it with your hands to bring it to the same thickness.

Fold the two lateral ends to completely cover the dough, leaving the two sides at the top and bottom open, then roll out with a rolling pin;

Fold the dough in two again on itself obtaining the classic book folding;

With a rolling pin, always pushing in the same direction, roll out the square until it turns into a long rectangle and repeat the operations indicated four times.

Fill half of the pastry thus obtained with ham and cheese and close with the remaining half;

Cut into squares, arrange them spaced on a baking sheet;

Bake at 180 ° C for 15-20 minutes.
