Gingerbread cookies

Ingredients
- 300 g flour 00
- 100 g of cane sugar
- 100 g of acacia honey
- 100 g butter or seed oil
- 2 g ginger powder
- 2 g cinnamon powder
- 1 egg white
- 200 g powdered sugar
- Lemon aroma
- lemon juice
- salt
- ½ teaspoon of baking powder
PREPARATION
- In a bowl add the soft butter (or seed oil) together with the brown sugar and honey. Mix until smooth.
- With Faribon 600 grind the 00 flour and add it in the bowl together with flour, cinnamon, ginger, salt and yeast to the mixture. Mix and knead.
- Shape into a ball, wrap in cling film and refrigerate for 30 minutes.
- While the dough rests, prepare the decoration, called "royal ice".
- Skim the egg white with the lemon aroma and gradually add the icing sugar with the help of a sieve. You will have to get a white, firm and smooth icing. Transfer it into the sac à poche.
- Take the dough placed in the fridge, dust the worktop with flour and roll out the mixture with a rolling pin. With Christmas-themed molds form the cookies.
- Transfer the biscuits to the baking tray covered with baking paper and bake in a pre-heated ventilated oven at 170 degrees for 13 minutes.
- Once ready, decorate with icing to taste.
