Rustic shortbread cookies

- Note: These biscuits are delicious both for breakfast and for snack. They are excellent with a traditional jam, but also with exotic jams such as pineapple and ginger jam. A real delight!
Ingredients
- 250 g wheat
- 75 g corn
- 150 g sugar
- 120 g butter
- 1 egg
- 1 egg yolk
- Salt q.s.
- Jam of your choice for the covering
PREPARATION

Grind the wheat and the corn with Faribon600 or Faribon600P to get a fine grain flour;

Gradually mix all the ingredients, except the jam;

Let the shortcrust pastry rest in the fridge for at least 1 hour;

Roll the dough out by giving it a thickness of 0,5 cm and cut it with a cookie cutter;

Create a hollow in the middle of the biscuit and spread one teaspoon of jam on it;

Bake the biscuits in the oven at 180 ° for 20 minutes.
