Rustic shortbread cookies

- Note: These biscuits are delicious both for breakfast and for snack. They are excellent with a traditional jam, but also with exotic jams such as pineapple and ginger jam. A real delight!

Ingredients

  • 250 g wheat
  • 75 g corn
  • 150 g sugar
  • 120 g butter
  • 1 egg
  • 1 egg yolk
  • Salt q.s.
  • Jam of your choice for the covering

PREPARATION

  • Grind the wheat and the corn with Faribon600 or Faribon600P to get a fine grain flour;

  • Gradually mix all the ingredients, except the jam;

  • Let the shortcrust pastry rest in the fridge for at least 1 hour;

  • Roll the dough out by giving it a thickness of 0,5 cm and cut it with a cookie cutter;

  • Create a hollow in the middle of the biscuit and spread one teaspoon of jam on it;

  • Bake the biscuits in the oven at 180 ° for 20 minutes.
