Almond Biscuits

Ingredients
- 4 egg whites
- 150 g granulated sugar
- 120 g Rice or Corn Flour (to be produced with Faribon 600 or Faribon 600 P)
- 80 g butter
- 1 tablespoon of potato starch
- ½ packet of baking powder
- 120 g peeled almonds
- 2 tablespoons of honey
PREPARATION

Grind the Rice or the Corn with Faribon 600 or Faribon 600 P to get the flour;

Beat the egg whites until stiff, gradually add the granulated sugar until the mixture is soft and fluffy.

Separately, sift the flour, baking powder, starch, and add the creamed butter, then the honey.

Gradually pour the mixture into the egg whites with the sugar, taking care to stir from the bottom upwards in order to not deflate the egg whites;

Chop the almonds roughly and add them to the mixture;

Separate the dough and roll it into 2 logs to be cooked for 25-20 minutes at 170 ° C;

Once they are taken out of the oven, let them cool and then cut them diagonally;

Arrange the cookies well aligned on a baking sheet and bake them in the oven for 5 minutes on each side;
